I have a customer that kept two tables and was expected to drop off the day after we picked up. They never dropped them, how do I charge their card? We use square for payments

Do you have their card information?

We use Square, nothing shows for card info in IO.

In order to have the card info saved you would need to go into your Merchant Services and check this and save. This requires the customer to save the card info.
