how to add staffing

So for the staffing part of adding to an event, how can we do it where we input the amount to charge versus it auto adding it based on the length of the event? We have our county fair asking us about doing the fair and what it would cost for us to be there and want to have it be staffed but it is auto adding how many hours it would be based on the time for the rental but that is just to see what 2 days worth of rentals would cost. I know I can go in and manually change the amount but is there a way where it shows how it costs per hour and then we can change the amount after.
