I want to offer a discount for a second day rental so my customers can have a unit all weekend. How do I do this and not have it charge 2x the simple daily price?

Go to Settings->Prices. For that item's price, edit it and change it from Daily Basic to Price List.
Add a line and for hours put 48 hours (2 days) and put the amount in. This will charge the same amount if it is 1 or 2 days.
