As my inventory is beginning to exceed over 200 items is there anyway to shrink the category until you expand in order to not have so much to scroll through while creating a quote?

Yes. Settings->Categories->Display Type. You are set to expand all, when you probably want collapse all. Bear in mind this will affect the backend leads page and your customer quote page. If your inventory is large, collapse all will probably work better on both pages.
