What does that mean? "Advanced"... sorry for the documentation isn't so helpful. For instance, if I want have a package for any moonwalk, any concession and some tables and chairs, how do I do that? The current documentation reads as if they'll have to put those items together themselves to see the "promotional price". But your image shows otherwise. I want them to see the available packages already put together.

You currently don't have any packages in your settings. You have "Specials" and "Coupons." If you go to Settings->Promotions and fees, you are able to create a "Package" and there is a checkbox that says "Advanced Rule" to build the package you need.
Packages using the "Advanced Rule" are the only ones supported on the new customer interface at this time.

Is there a way to remove or hide the packages from the quote page ? I still want to use them, I just prefer for them not to be visible on the quote page.

We can hide it for your account specifically by modifying your quote form. I've added it to todays "todo" list
