How does a customer go in and modify an event booking? Add or delete a rental?

I have a customer that has a current event booked for June 11th and they want to add a rental. How do they go in an modify what they have already paid a deposit on?
You can simply edit the lead's event tab and add the new equipment. If they've already signed the contract, there is a snapshot created of the contract template that's signed. In the contract tab of the lead, you can click edit, and activate the "Generate contract as needed from template:" and email that to the customer again for re-signing. The deposit due is also on this contract tab as well as any payments they've made already.

I understand how to modify it myself, but there isn't a way for the customer to go in an modify the booking? They want to be able to see options, pricing, etc. and then modify their booking. Are there instructions that I can give to the customer for modifying a current booking?

If a customer is viewing a quote, next to the "book now" button, it will bring them back to the quote form to modify what they've put in. If it's a contracted event already, you'll probably want to move that back down to the quote status because the customer isn't going to sign that old contract or do that event.
