What is the best practice when a customer wants to add tip to an event? Create a inventory item, staff cost line item, or some other way? And ideally having the tip either show up in payroll or be able to run a report to show any tips during a certain time period?
Most of our clients set tips up as fees...but don't have them show up in payroll through IO. How they disperse them is on a case by case basis. And yes, just like any fee we can run a report during a certain time period. We connect the fees through Optional Fields...we give the customers the option to add a tip to the quote and link the "fee" to the question. Something like..Would you like to add a tip? then it would give them 3 options with amounts or percentages of your choosing.

Here is a video on how one would set up a fee that's only invoked when the user checks a checkbox. This example uses "Damage Waiver" but it could easily be labeled "10% Tip" to accomplish the same goal:
