How do I change the settings so that I'm able to change my prices after a customer submits a quote if need be? Thanks

That's something you are able to do by default. After the quote is saved, you can change any line item price by editing the lead and changing the price next to the rental name. Just don't check the "recalculate" button next to the total before saving it because the "recalculate" button is only used to recalculate the lead using the default saved priced.
