Customer - Thank You email

The customer - thank you email template has the Send field set to "days after event". Is there a way to have it send immediately after the event end time? Would that be a 0-days? Or would that end up in the review sending the morning of the event?

You can have it sent within a few minutes after the end time if you enter .1

Any way to have it send just after the pickup time, instead of related to the event end?

With this email template there is no way to send relative to the event end. A custom automation could be used for such a purpose, though. You would just have to use the "Pick Up Time" filter field, and set the timeframe to within the last 1 hr. Automations run every 15 minutes, so if set up properly, it would send within 15 minutes of the pickup. No way with the existing automatic email though.
