In your Delivery Methods you can restrict there.

Open the item in Settings-->Inventory and go to it's advanced settings, and you can set the restrict setting to book. The message that would display to the customer on checkout if they tried to book can be edited in the Settings-->Languages. You could do a price override in WP for the website display.
