If you go to Settings-->Pages/Templates and open every page you can simply click and edit the group name for each page template.

If we do that, will it change in the URL? as in if I currently have site.com/io_quoteform/?page=jumping+jumps
and I change the page group name to JJLLC will the URL also change to reflect the page group?

If you update the group name this will upate the URL.
