Added field to drop down

A few weeks ago, an event field was added to my quote page. It’s working great, I want to add more fields to the drop down, I think I can figure that part out, but how do I restrict someone from booking if they select fraternity or sorority option? When they select these options, something like “we are not servicing this event at this time” and doesn’t allow them to book. Would something like this be done?
