When I update an address in the customer tab, and have more than one contact (ie, one for the customer and one for the venue), it updated both addresses at the same time. How do I update only one contact person's address?

You would have to open the customer profile and change it within their profile. This will not affect the additional contact address if you adjust within the contact profile.
Click on the icon with two people next to the contact name and that will take you to the customer/contact profile:
