understanding quantity inventory for consummables

Can someone help me understand the quantity totals for consumables? for example, my cotton candy bags. I have 10, 100 packs and sell them in packs of 100, 1 at a time. I set my quantity as 10, but I do not understand the other numbers on this screen show. I only have one order on the 29th of October that uses 2 packs, but it says -21??

The last line says you have 9 on hand? The -21 is what you started with before you entered your inventory amount

also, what happens when it is negative? does it send us a message or does it block the customer from booking it?

It doesn't send a message or anything...it shows negative and in red on a lead just like a conflict and wouldn't allow an autobook unless you override. It probably showed negative to start because you had marked as consumable and had leads out there with the item on them but didn't have the on hand amount entered yet? As long as you have the correct on hand on there now you should be ok going forward.
