Good morning!
I was reviewing my customer directory and I noticed that all customers, including ones that did not complete their booking, show in my customers.
Is there any way to view or filter out just customers that have completed an event?

Unfortunately there is no way to run a filter on the customers page that only shows customers that have had completed events in the past.

What I would do...
Create a filter to capture when a lead becomes complete. Create an optional field for customer profiles that makes sense with what you're doing. Something like a dropdown that chooses between completed customer, and potential customer. The display on page should be lead/customer
Then use the filter in an automation. the action should be set field to completed customer (it's important you use the same wording as the optional field). make it for once per customer.
Now you can create a customer filter that captures customers with that field set to completed customer and use that in a report, automation, newsletter, etc.
