Is there a way to eliminate items that are being picked up from the combined packing list when there are deliveries and pickups on the same truck?

You can choose if you would like print the delivery or return packing list, but you cannot choose per event which returns/pickups show on the packing list.
This is no way to separate the combined packing list this way.

In the grouped list, where it combines the total number items, you can't but where it lists everything out, you can. We don't use grouped backing lists. And currently manually add up totals of things we need.
