Is there a way to shut off the ability the customer has to automatically book an event for the 4th of July weekend? I want them to call me to book it.;

Yes you can do this by applying a blackout date in Settings-->Black-Out Dates and you can choose to restrict quotes or bookings. If you restrict by booking the customer would still be able to get a quote but not autobook.
