I would like it so that inventory that is in a hidden category, if added as an accessory to an inventory item is still visible?
If that's not a thing how can I make it so that they can't pick an inventory item by itself (like an accessory) but it has it's own accessories.

You would have to turn it into a rental item and under advanced make it not visible on the quote page, because and accessory can not have accessories.
