manipulating the shopping cart

I am doing Christmas light installation with my IO wordpress site. What is the best way to manipulate the shopping cart to only allow the customer to choose the potential install date and not the "end time." Or is there a way to avoid them from choosing a day and time on the shopping cart at all and just add the service they are interested in so they can make a deposit?

In the IO plugin on WP under the setup tab you can hide the times on the cart and just have a default time setup in the backend of IO in the general preferences for when the lead is created, it will come in with those times you have set. We cannot hide the date as it would not allowing a quote and be a partial resulting in customers not being able to get to the contract for payment. (see below images)
