is there a way to edit what the delivery block says?

Yes. Go to settings>pages/templates>Delivery popup. and edit. if you can't find it, look in the inactive templates by typing "inactive" in the search

So that will allow us to change the info in the pop-up not the box itself.

Correct. Sorry. I don't think there's a way to change the box.

Unfortunately no there is no way to change what is in the actual box.
