Set delivery type for a specific item

Is there a way to set a delivery type as the default, or only option for specific rental items? Or is there a different method for setting a delivery fee override automatically for specific rental items?

There is not. Delivery is set per lead, not per item, because in most cases, a lead may want more than one item. And a delivery method is not usually different for that. I.e. a customer wants a bounce and a popcorn machine and you want to make the popcorn machine pickup only. Chances are, you are not going to deliver the bounce house and force the customer to pick up the popcorn.
However, you could create a quote page group for just that item, then create a delivery method that restricts all other items from using that delivery method except the one you want to But I dont know what that looks like in practice on a website.
