When I send out an event quote, I keep having to change the message in the display box because I do not like the way it's set up. But it's automatically popping up every time I send a quote, so I feel like there should be a way to change it. Same with when I email an invoice. We just bought this business over, so I'm still trying to get everything figured out, but this one I can't seem to get.

Yes, if it's the email message you mean go to Settings-->Email Center. There are a couple of different quote emails...there's the manual quote, then there's a couple automatics quotes as well.

send a quote and post a screen shot of the message

if you are talking about the subject line or the message etc
go to settings/email center/ and you will see a full list of all the emails and the text, subject lines, etc
you can change any of those you want
you can get all the template variables here if you want to change any of the info
ours sends dates times invoice numbers conttact info balance due and so much more
