IS there a way to make these boxes deeper so more text can be seen? If not, how/where can we remove the text that is there? Page is below.

The category descriptions are meant to be short, 1-2 lines. I would suggest shortening them. The full description is displayed on the individual item pages.

Is there a way to create a short description under a certain number of characters for this page and then the full description at the main category page? Or some way to clean this up? I'd like to know as well.

You will need to go into your categories and insert a short description and a long description. It looks like you have the long description inserted where the short description needs to go and nothing inserted for the long descriptions. See screenshot attached. For the short description I suggest 1-2 lines.

It looks like there is still nothing in the long description section. I'm only seeing text inserted into the short description section. See attached.
