Optional fields not working correctly

I'm trying to add an optional field with default text already filled in. The default text will not display on the lead, no matter what I do (Small text, large text, notes, HTML). I have an older one that still works, but new ones will not. I even copied the working one and that did not work.
See my optional fields named "Test" and "Test Venue" for reference. "Test Venue" is a copy of "Venue List"
This is not urgent.

I have also noticed this and just corrected by creating a filter that sees the field is not set and then adding an automation to fill in the text.

When I looked at the "test" optional field I didn't see any default text saved? I went in and saved and it's working?
