Is there a way for me to change the packing list for my customer pickup orders so that it should the following
Event Date
Pickup (delivery) date
Return date

Do you just want to create a secondary packing list template with these variables, or do you want for the packing list to show these things based on the condition of the delivery method?

I would like to be able to print one packing list for customer pickups that not only list all the event info, customer information etc but also when they are coming to pickup and when they will return. Along with any money owed as well as a palce for a customer signature as well as a teammember signature of who gave it out and then who returned it.

Go to Settings-->Packing List Templates. You can add packing list Template here. Then when you run a "customer pick up" filter on the leads page you can use the print utility to print these up each time
