I need to make my deliveries and delivery and set ups only bookable at certain times. For instance I only want people to be able to auto book a tent delivery for Fridays between 5-8pm is that possible? Can I do this for certain inventory items only or can it also be done for all items? Like can I set delivery for certain items for specific times only?

You can restrict autobooking for specific items on a certain time and date with a filter created for Settings-->Online Quoting. But it is not currently possible to do this for the time pickers on the shopping cart and checkout page.
