I am using two different pages/templates, each with a unique logo. How can I get the *header* variable to display the proper logo based on the page selected on the Lead?

You would need to place an image of the logo directly on the page/template. The header variable is going to pull whatever logo you have uploaded in the Settings--Account Preferences.
