I need for all deliveries to be Fri-Sun rentals. How do I accomplish this as the default when booking? Basically each unit is available to be booked per weekend (Fri-Sun) not per day. That way the same unit doesn't get booked Sat and Sun.

Can you clarify on this? Do you allow Mon-Thurs booking?

Are you only allowing your customers to select Fri-Sun on the shopping cart/checkout?

So we aren't doing deliveries on Saturday. So when they book for a Saturday I'd like it to make the unit unavailable for Fri-Sun automatically. Would changing the default delivery window do this?

You could do so by setting your event availability at Settings-->Online Quoting, and by adjusting your default delivery windows at Settings-->General Preferences. You can also set recovery times by item in advanced inventory settings, which would keep items unavailable for a certain period of time after they were last rented.
