For sales taxes: is the cc processing applied on the base price/ subtotal only or is it on the taxes/ total as well?

The fees that Global Payments charge us: are they on only the base amount/ subtotal only or are charged on total that includes the taxes? Say my large obstacle is $300, before sales tax: would they only charge on 300 or after its taxes amount of $321

If imagine it's for the amount processed. So the entire total including tax
