If paying cash minus the tax?

Hi,
I want customers to put in a deposit via CC or Paypal to confirm each order.
However, for the balance I want to take off the tax if the customer pays the balance due with cash.
Is there a template variable that reflects the balance due minus the tax?
Or is there a way to reflect the a -8.25% discount and charge them the discounted amount if they pay the remaining balance cash?

If you are giving them a 8.25% discount on the whole balance maybe set up a discount under Promos & Fees specifically for this? Maybe call it a Cash Discount and set it for -8.25% ...but it would have to be added manually when you apply the payment
