When emails go out, at the very bottom, they are showing This email was sent by: Company Name Company Address. How can we edit that field?

This is pulled from the Company Name and Company Address in Settings->Account Preferences.

How can we edit the code to show different information populated to that section of the email that is sent out?

That section is not editable. It's required to be in there for sending automated messages.
