How do I create an ongoing stat statistic showing the amount of revenue per payment type? i.e. Credit Card, Cash, Check, etc..

I made a report for you labeled 'Payments', which will show exactly what you're looking for. To open the report go to settings --> payments, then on the top right of the screen click where is says reports and choose the 'Payments' report (shown in image below). You can select a certain time frame to run the report by clicking the little calendar on the bottom left side of the screen (green portion).
