For manually sent emails (quote or contracts) the bounces are sent back to you and because of this the system will not know when they bounce so it won't show up in the log.
The automatic emails are sent back to our system when they bounce and will be shown in the log when they bounce.

Interesting. I have intentionally sent bad emails manually to see about the bouncing/logging but never until today got one in my inbox, spam or otherwise. Has there been a change on your end with the email servers or anything else recently? interestingly, this began happening right after the server issues this morning. Considering we've sent out 4000+ manual emails in the system this year and never got a bounce til today, I assume something changed behind the scenes. I'm just hoping it sticks

Nothing has changed recently...it has always been this way. I'm not sure why it is suddenly working for you.
