There wouldn't be a way to hide them from the customers view on a customer facing template. I'd recommend putting it on one they don't typically see at all like the packing list.

If you go to settings>optional fields>additional notes. You can enable that on your lead. Then use that variable anywhere you want it to show, Packing lists, etc. And don't put it anywhere you don't want customers to see it.
