I want to structure pricing where weekdays Monday-thursday are a certain price per day and then weekends Friday-sunday to be another price for the entire weekend. How do i do this?

You'll want to do conditional pricing.
First Create two filters. Both should be the pricing type. On one name it weekday pricing and set the Lead Start Is Weekday (Mon - Thur). Save and close.
On the second one. Call it Weekend pricing and set the field name to Lead Start Is Weekday (Mon - Thur) but change it to No.
Now create a week day item price table and and week end item price table for every item.
Now open every item. show conditional pricing. select the filter you want to be the base price and then select the corresponding item price. Then online two select the other filter and make sure it overrides the base price. Then select the corresponding item price.
Repeat for every item you want to do this.
