I would like to enhance the information provided in the email alerts (in the Alerts center).

For example, the quote alert shows the whole quote, but it's the only one that gives that kind of information. I'd like to include the contract for contract-related alerts, the invoice for invoice-related alerts, etc.

I'd also like to include the event notes on cancellations, since we list cancelation reasons in that field for reference.

At this time, the email alerts sent from the Alerts Center are not designed to be customizable with additional content. These alerts are intentionally brief, meant only to notify you of an event so you can look into the details further. While it's a valuable suggestion, we likely won't be developing the ability for users to individually modify these alerts.

Ok. If it's more likely to get a feature request through to enhance the alert itself, it'd be awesome if all alerts can include the quote/contract/etc. that the alert is regarding. That seems the most common sense enhancement.
